An expert team at Guittard travels the world, working closely with growers to assess the development of individual crops and to oversee the fermentation and drying process of the cacao beans. Whether working with the bold and traditional, or the unique flavors and characteristics of rare heirloom varieties, Guittard is constantly searching for that elusive blend or single origin bean from which to develop a whole new and exciting chocolate experience.

The painstaking process of transforming the dried cacao beans into an American treasure is done in Guittard's Burlingame, CA. facility, where cherished recipes and techniques, handed down from generation to generation for over 135 years, are still in use. From French roasting, to stone grinding, to conching formulas developed by great grandfather, Etienne, Guittard Chocolate Company's superbly crafted artisan chocolate can only come from the expertise and inspiration of a family-run business intent on continuing its long and distinguished legacy.

E. Guittard chocolates use only all natural ingredients, such as pure cane sugar,
real vanilla beans and full cream milk in the case of milk chocolate.
They are also free of any genetically modified ingredients (GMO Free).
All E. Guittard chocolates are kosher certified by the Orthodox Union.

Guittard Chocolates 72% Cocoa Extra Dark Mini Bars

This very dark, high intensity bittersweet blend is for the true aficionado. Dark, rich flavors linger with a minimum of sweetness, and it's 72% "cacao mass" with no cocoa butter added.

Nocturne is a uniquely complex blend of about seven different beans from each of the 3 major cacao growing regions - Central and South America, Africa and Asia. Aromas of ripe cherry and deep chocolate foreshadow complex layers of tart citrus, red fruit and nutty notes held up by a solid chocolate base. This medium-bodied, very intense chocolate is smooth on the palate with a long bittersweet chocolate finish.
